Unbleached Untreated Flours
- All flours from Bread Depot are Unbleached and untreated as a default. Bleached flours are pre soaked in chlorine to make flour turn into a whitish color. As nice as it looks, it will affect the color and taste of end product, especially lean doughs like sourdough and baguettes.
We take pride in sourcing small batch unbleached flours in partnership with our local mills.
Untreated flour is without the treatment of Sodium Benzoate, Benzoate is a chemical used for preserving food, it typically is associated to some side effects such as skin rashes.
Due to the lack of treatment and preservatives, the flours will has a small tinge of yellow akin to all unbleached flours. This is the natural color of wheat which is preserved by omitting bleaching and preservatives.
Fortifications
All flours will follow Philippine FDA Rule that all wheat product are all required to be fortified in Vitamin A and Iron. Hence all flour wheat products have the required amount of fortification.
Stocking
We stock our flours for a maximum of 2-3 weeks. Else, it is stored in a control temperature room or freshly milled and picked up at least twice a week.
All our local flours are consumed within a week to two. This allows us to sell the freshest batch
of flour that you can find anywhere in the metro!
Expiration
Due to the environment of the Philippines, people are encouraged to use flour within 1-3 months from production date. Heat and Humidity plays a big role of oxidizing flour ingredients. Should you want to keep flours for a longer time please refrigerate/ freeze it. This will extend the shelf life of the flours from 4 to 8 months, respectively.
